Aaloo Gosht Recipe (Beef/Mutton and Potato Curry)
Ingredients:
– 500g beef or mutton, cut into bite-sized pieces
– 2 large potatoes, peeled and cut into large chunks
– 4 medium onions, sliced
– 2 medium tomatoes, blended into a paste
– 1/2 cup plain yogurt
– 2 tbsp ginger-garlic paste
– 1/2 tsp turmeric powder
– 1 tbsp coriander powder
– 1/2 to 1 tbsp red chili powder (adjust to taste)
– 1 tbsp Kashmiri red chili powder
– 1 tbsp salt (adjust to taste)
– 1 tsp whole black peppercorns
– 1/2 tsp green cardamom powder (or 3-4 pods)
– 8-10 cloves
– 1 cinnamon stick
– 1 black cardamom pod
– 5-6 green chilies, sliced
– 1/2 cup fresh coriander, chopped
– 1/2 cup ghee or oil (or as needed)
Instructions:
1. Sauté Onions: In a large pot, heat the ghee or oil over medium-high heat. Add sliced onions and fry until they turn light golden brown. Add whole spices (black peppercorns, cloves, green cardamom, black cardamom, and cinnamon stick) and cook for another minute.
2. Brown the Meat: Add the beef/mutton pieces and cook until they change color (about 3-4 minutes). Add the ginger-garlic paste and cook for 2-3 minutes, stirring frequently.
3. Add Spice Mix: Add the tomato paste, red chili powder, turmeric, coriander powder, and salt. Mix well and cook until the masala is well-cooked and the ghee separates (about 3-4 minutes). Stir in the yogurt and add 4 glasses of water. Bring to a boil, then reduce the heat to low.
4. Cook the Meat: Cover the pot and cook on low heat for about 1 hour, or until the meat is 80% tender.
5. Add Potatoes: Add the potato chunks and cook on high heat for 8-10 minutes, stirring occasionally, until most of the water has evaporated.
6. Thicken the Gravy: When the masala thickens and the ghee separates, add 2 glasses of water (or adjust to desired gravy consistency). Cover and cook on low heat for another 10 minutes, or until the meat and potatoes are fully tender.
7. Final Touches: Remove the lid, add sliced green chilies and chopped fresh coriander. Cover and let it simmer on very low heat (dum) for 5 minutes.
8. Serve: Your delicious Aaloo Gosht is ready! Serve hot with chapatis, naan, or boiled rice.
